Sun Dried



My Tomato crop reddening is currently at full tilt, and so I've decided to start preserving. It's not something I've ever considered before but I want nothing to go to waste (I'm ever so slightly mean, you see).
I found a recipe on the net and set to work. The recipe said "Cut 'em and microwave 'em. Even I can do that I thought.

30 mins later and they were done, my first microwaved dried tomatoes. Tasty? No they were awful. Still, I'll have another go tomorrow.

I always have too many tomatoes! I cut them in half and put them on a baking tray with olive oil, salt pepper and herbs. Roast them till some of the water has evaporated and they are turning colour. Then just put them in the liquidizer and freeze yourself a batch of pasta sauce.

Freshly cut tomatoes with salt and pepper is my favorite... Mmmm...

You can preserve tomatoes to make them last longer. Another way to make them last longer is to make them unedible. Hope you have better luck next try.
